World Nutella Day 2016

Yes! It’s that time of year again when it is perfectly acceptable to profess your love for the chocolate hazelnuttly goodness that is NUTELLA!!  Let me be honest, everyday is World Nutella Day in our house and we don’t need an excuse to enjoy it. However when I first heard of this “holiday” I was excited that I could shout out to the world that.. YES! I love to eat copious amounts of Nutella.

Even though WND is no longer being hosted by Sara & Michelle* I’m still super excited to see how Ferrero is going to celebrate. (even thought it’s totally lame that their search for Chief Nutella Ambassador was only limited to US residents)

This year, we acquired a Nutella cookie cutter (purchased with a jar of Nutella) and I thought it would be fun to make Nutella cookie sandwiches. It’s one of the recipes that came with the cookie cutter.

This recipe was really easy and more importantly surprisingly light. It’s a great substitute for sugar cookies.

Cookies ripieni con Nutella:

450 gr  flour ’00’

250 gr butter

150 gr powdered sugar

1 whole egg + 1 yolk

1 vanilla bean (or 1/2 tsp of vanilla extract)

150 g Nutella

salt

 

In a mixer: add flour and butter until mixed well. (looks like a crumble.) Add sugar, pinch of salt, eggs and vanilla. Mix until it’s well combined and dough like. Shape into a ball and refrigerate for an hour.

Preheat oven at 180C (375F)

Take dough out and let rest for 10 minutes. Afterwards roll out dough and cut into shapes. Bake for 10 minutes. Let cool. After cooled spread with Nutella and place another cookie on top.

As you can see, we enjoyed them despite how they look on camera. (They’re either camera shy or posing depending on their mood)
