Texas Independence Day

March 2nd was Texas Independence Day which marks the day Texas signed it’s declaration, freeing them from the control of Mexico.  We Texans are a proud bunch.. incase you didn’t know.

The best way to celebrate in true Texas style would be to have some seriously good barbecue.  I had planned to make a really good meal to celebrate but I have been so busy with V and school that I had forgotten about TID.  I had wanted to browse through the index of Homesick Texan but…. it never happened.

I had to settle for hamburgers instead.
*sigh*
I miss Tex-Mex food!
