Homesick Texan*

Yes… you read that right… I am one Homesick Texan.  I don’t know if it’s because I had family/friends here for a month or if it’s because I skyped with my parents the other day but, I really miss Texas.  Besides my friends and family (they don’t count because you will always miss them….) I miss food. I’m talkin’… mouth waterin’, juicy, fattenin’, high calorie, stick to your ribs ALL AMERICAN FOOD!  It all started when my friend Dulce came to visit.  We talked about what we missed in Texas (since she was living in Mexico for the past 3 years) and the topic turned to all things food.

After her visit, I made a trip to the grocery store and I saw something that sparked an idea.  So, I grabbed my ingredients and whipped up a batch of “not jalapeno” poppers!  Of course, I didn’t just make them for myself… I had already had a dinner appointment with the LDS missionaries so… they were my guinea pigs!  Luckily, they turned out fantastic and I have been craving them since.

These peppers are called Peperoni Friggitelli.  Usually you would fry them in some oil which by the way… are SO GOOD!  They are a seasonal item so, when I saw them at the store, I only bought a few to try out.  Add some Philadelphia cream cheese & Pancetta (aka bacon) and you’ve got yourself a party!
I bought 6 peppers (3 for each) and cut them in half.  The one thing I’ve noticed is that the pepper is not as thick as a Jalapeno which is ok but also, the Pancetta has more meat than regular bacon.  So, it’s less greasy….. (but nonetheless…. still artery cloggin’!)
Add a juicy homemade Cheeseburger & Coke…..
and you’ve got one happy Texan!

  1. I'm the first to leave a comment! Plus, I'm running to the store RIGHT NOW so I can make those jalepeno poppers. My husband especially would LOVE them. Thanks! You are quite the cuisine expert. You are so engulfed in so many cultures, it is a very delicious looking kind of life! =) Your baby is beautiful and I hope you are loving her to death!
