Here’s a little tidbit about me… I love me some green beans. They are my favorite veggies and I could eat them every day.. in fact.. I have. Back in the day when I used to work in the ER at a big Dallas hospital, I sometimes worked the night shift. (7pm-7am) At 2am, there’s not much you can eat and sometimes I was just too tired to care so, most of the time, my dinner was a can of green beans and a can of pineapple chunks. Even though it was very UNHEALTHY for me to eat like that, I did it anyway and lost lot of weight… but I felt tired all of the time.
Ok.. back to the post… A while back, Michelle at Bleeding Espresso posted a recipe on her Facebook page. It looked so yummy that I had to try it.. and I’m so glad I did. Carlo LOVED it so much that he wanted me to make more AND.. he wanted to eat left overs! Carlo never eats left overs unless it’s his mom’s food so this was a huge compliment!
