One of my favorite things that Mamma Adelasia makes is Zucchini Fritti. It’s so good and not very healthy but… it’s zucchini so, it’s half-way healthy.
Because it is soo simple and good, I always make it when zucchini is on sale at the store.
Zucchini Fritti
Zucchini
Olive oil
Salt
Start by Slicing the Zucchini. You can slice them thin and round like chips or long like fries. Lay zucchini on a clean dish towel (single layer) and cover with another. You want to remove the water from the zucchini. Wait about 30 minutes.
In a skillet, heat Olive oil.. enough for frying. When the oil is ready, carefully place some in the skillet turning over as it browns. (Make sure you don’t put too much in the skillet. Just a layer at a time)
Once your zucchini is golden brown, remove from skillet onto a plate (with a paper towel to remove oil of course). Once you’ve done all of the zucchini, salt to taste.
